Food residues processing and upgrading
using enzymes and microorganisms
Food by-products or residue materials from the side streams of the meat, dairy, agriculture, aquaculture and fishery industries, constitute large-volume feedstocks available for valorization into new feed and food ingredients.
The SFI-IB industrial partners take great interest in the development of tailored enzymes for biomass valorization, and also the application of microbial fermentations to process their side streams.
Besides the biomass valorization, enzymes will in SFI-IB be applied to improve the organoleptic properties of high value products. The purpose is also to increase the digestibility of feed proteins through enzymatic hydrolysis, and to add new functionalities in innovative product upgrading processes (e.g., prebiotics).
